Ingredients:

  • 240g oats
  • 1 tbsp coconut oil
  • 360ml almond milk
  • 1 egg (*or vegan alternative)
  • 1 scoop Vital Proteins Collagen Peptides
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 40g raspberries (optional topping)
  • 40g blueberries (optional topping)
  • 45g pomegranate seeds (optional topping)
  • 30g pumpkin seeds (optional topping)

Method:

In a food processor, combine all of the ingredients (except the coconut oil and toppings) and blend until smooth.

Add the coconut oil to a frying pan and cook over medium heat.

Scoop in about around a quarter of the mixture and cook the batter on both sides for up to 5 minutes.

Repeat with the remaining pancake batter, then remove the pancakes from the pan, finish with your chosen toppings and enjoy.
