Pavel Koldas bees collect nectar from Oilseed Rape (Brassica napus) early in the spring where he transports his hives every year. Rapeseed honey has a characteristic yellow to lemon yellow colour, almost white after solidification. Rapeseed honey has a delicious, mildly aromatic taste that also varies according to the particular variety of rapeseed. Because it contains a different proportion of sugars than other types of honey (high glucose content), that's why its crystallization is so fast.
