My name is Pavel Koldas. I am originally from the Czech Republic. I have lived in Ireland for 20 years, the latter part in Co. Wicklow. I studied horticulture in Botanical gardens college Dublin and subsequently secured a job as head gardener in a 2 Michelin star restaurant. From an early age I went with my grandmother to our garden, where we grew all kinds of vegetables, fruits and the rearing of animals. Collecting and foraging has been part of my tradition. My grandfather kept bees which remains very much a part of my genetic history. My adventure started in 2016 when I bought my first beehive.
What inspired you to join the natural health sector?
Because of the emphasis on a healthy balance of food intake, I decided to pursue organic gardening. To accomplish this my interest in bees became primary.
Where did you get the idea for your brand?
The natural beauty of Enniskerry and its surrounding gardens.
What makes your brand unique?
Irish heather honey has been recently compared to the renowned Manuka honey of New Zealand. I wish to add to the exaltation of Irish heather honey. Heather honey is thixotropic which forms in a semi-solid way until it is stirred.
What are your company’s core values?
To satisfactorily address the nutritional needs of our clients.
How do you support your community?
To accomplish this, the plan is to employ a larger workforce to spread the information about Enniskerry honey.
What has been the most rewarding part of your brands journey?
The excitement and passion of offering a unique product to my customers.

The unpolluted ecology of the countryside together with the loyalty of customers.
