The freeze drying is a special process preservation method whereby the moisture content is removed from the fruit by sublimation as opposed to evaporation which is employed in conventional drying. This is achieved by freezing under vacuum conditions which removes the moisture in a gaseous state as opposed to a liquid phase.
This process retains all the nutrients and flavour within the fruit resulting in a delicious and crunchy preserved fruit.
