Doves Farm vitamin C is an excellent addition to the kitchen of any home bakers out there. This simple ingredient acts in a similar fashion to baking soda in that it reacts with the yeast to form pockets of air which give rise and volume to the bread. The slight acidity of vitamin C provides and environment for yeast to thrive in, which baking soda can’t provide without an addition like lemon oil.
Vitamin C is well suited to wholegrain baking, and can give a finer loaf which is well suited for use in a sandwich loaf or for toasting. Vitamin C is suitable for gluten free baking.
