Rye is a popular grain as it is more sustainable and satisfying than wheat. It also contains less gluten than wheat; this also results in a significantly denser bread. Rye is becoming more and more popular with Evergreen customers and it is no wonder why. It is a great source of the B-group vitamin as well as vitamin E. It also contains potassium, iron, zinc, magnesium, phosphorus and selenium. Rye is also an excellent source of dietary fibre. Unlike many other grains, rye also has a high level of fibre in its endosperm, not just the bran. This makes the glycemic index (GI) of rye bread lower than most other grains, meaning it will help keep you fuller for longer. Directions

Rinse and simmer in 3 parts water to 1 part rye grain for approx. 1.5 hours
