Millet grain is an extremely versatile grain but is most commonly used to make porridge, cakes, bread, soups or pancakes. Millet is very nutritious as it is rich in B vitamins particularly niacin, B6 and folic acid, as well as calcium, iron, potassium, magnesium, manganese, phosphorus and zinc. It is high in proteins and contains all of the essential amino acids. In order to bake raised breads using millet however xanthan gum or wheat would have to also be used. Millet is a mild tasting naturally sweet grain and can be ground down into millet flour for baking.
