Pot barley, which is often referred to as dehulled barley or scotch barley, is barley which has the inedible, fibrous, outer hull removed. The most nutritious part of the grain, which is the bran and the germ are still present, which is why pot barley is considered a very beneficial health food. Pot barley makes for an excellent addition to the diet; it contains a number of essential nutrients including selenium, B vitamins, copper, phosphorus, magnesium and chromium. It is also an excellent source of dietary fibre which aids digestion and helps reduce constipation. Barley is also lower in calories and fat than many other grains.

 

Directions

rinse and simmer in 3 parts water to 1 part barley for approx. 45 minutes.
